I've been subbed for a month and have made a sizeable amount of money in the game, if I unsubbed for a while to focus on other aspects of my life and returned later would I be refunded all my money or only 350,000 credits; the unsubbed limit. If yes, would it make a difference if I used my character while I was unsubbed and spent some of that 350,000 credits?

If you unsub, you are limited to 350k credits but anything you gain above that isn't lost, it goes into an "escrow".
So your money is stored, but you cannot spend it.
When you become a subscriber again, all credits in your escrow return to you and you can spend them again.

So for example, let's say you have 1M credits :
You unsubscribe, you retain 350K credits, and 650K go into your escrow.
Then you do some missions and earn 100K credits, since you are already at your limit, it all goes into your escrow, so now you have 350Kcredits, and 750K in your escrow.
Then you buy some things on the GTN that cost you 300K credits, you have 50K credits left, but still 750K in your escrow.
And then, you become a subscriber again, your escrow is returned to you, and you end up with 800K credits.
