Most of the time in these cases plot armor comes into play.

As a long time reader/player of EU novels/comics/games/whatever, I can honestly say it all depends on who's depth of power/skills the author is trying to indicate, whoever that is wins.

Plot and Circumstance can kill anyone.

3rd rate Space Pirates have killed a Jedi through trickery and misdirection. Distractions can drop their guard. And if they're forced to protect someone, concentrated blasterfire can be their undoing. Quite honestly if you can get passed their precog, a bullet can kill a Jedi, because without that precognitive warning, they won't react fast enough to avoid it or notice they're getting shot.
