I've seen many opinions on this, ranging from 500 to 700.
Anyone done any careful testing?
As a guardian I would like the extra HPs from a couple of PvE pieces, but only if it doesn't gimp me. Thoughts?

500 expertise is the soft cap for dps. For healers it may be a bit higher.

I'm a healer with 500 expertise and I find it fits me just fine.

703 is the ideal Expertise.

I'm kind of hovering between 650 and 680

I wish the PvE sorc set bonus' weren't utter trash. Something like the BH one would be nice, something....useful.

500, once you get 10% any higher is over stacking and you lose out on other stats. >_>

hit 10ish% and go for the extra bonus if good enough for your class,or have access to nm gear!
