Why do Stormtroopers wear armor...

... when every blast bolt and arrow goes through it?

I'll give you that a medieval knight could be beaten to death through his dull suit of steel armor, but space-age future-past armor I expect better of.

If you saw a soldier with a gun that didn't have a type of uniform, they would be shot before thought.

Pretty much, the armor was more so uniform for distinguishing ally from foe.

Watch Star Wars again. When the Stormtroopers are boarding the corvette at the start of the movie, a few bolts fired by the Rebels glance off the stormtroopers' armor. Why does this happen? Because those Rebels are not the heroes of the story.

That. Han Solo, Luke Skywalker, and others are the heroes, which is why every one of their shots fells a foe, even the ones in armor. Moreover, the arrows by the teddy bears that killed/injured stormtroopers in ROTJ did so through body gloves between armor. Note how much more effective clonetrooper armor was in AOTC - of course Lucas also had a decade or two to perfect the look of the armor, over the plastic stuff he'd used in the original trilogy.

why SWTOR's trooper got better and badder armour compared to Clone wars armour

One of the troopers is hit in the back with an arrow at the start of the fight., it pierces the armor not the body glove.

Also we see storm teooper armor crack and break as they fall over

Intimidation factor, they scare 99% of people so much no one wants to shoot at them. You see if that 99% realized how crappy their armor was, they would most likely overthrow the Empire.
