I actually have a Dashade customization thing, but I don't know how to apply it to Khem and I'm standing right next to a Modification Machine... can anyone help?

The "Modification Machine" is for modifying your gear. Unless you mean an Appearance Modification terminal, which is only used for changing your character's appearance. Anyway...

Hit C to open your character sheet.
Click the Companion tab, down at the bottom.
Drag the customization to the appropraite slot.

Or just Alt+Rightclick on the customization..

where would I get Vette's customization 8 without the Fury Interceptor?

If you haven't gotten your personal ship yet, you probably should just finish your Class Story on Dromund Kaas and get it.

Or you can go to the Fleet (if you can get to the Fleet), pick up one or more of the Heroic missions for Taris, and use the "Heroic Transport" button in your Mission Tracker to go to Taris. Once there, use your speeder (if you have one)to travel to the Taris spaceport, which may be soemthign of a Trek, depending on which Heroic mission location you traveled to.
