Why does no-one else use Lightsabers?

A couple of reasons:

1) They are extremely dangerous. The lightsaber blade has no weight, or rather no significant mass and has an omni-directional cutting surface. Without Jedi reflexes, swinging one around is more likely to get you killed rather than the person your fighting. So even using a short blade saber is more dangerous to the user than the attacker.

2) Availability. Most Jedi use their lightsabers all of their lives. Despite what the game would have you believe lightsabers aren't just laying around everywhere. Making them requires specialized skills. Its probably possible for someone to learn to make one, but then there is the danger of using it (See 1 above).

3) Practicality. The truth is, for most sentients, using a lightsaber just doesn't make a lot of sense because it would take years of training to use it effectively. The reality is, nothing beats a good blaster at your side.

Also as a side note, there are non-force users who wield lightsabers. General Grevious is the most prominent. But then there is also Pre Vizsla, a Mandalorian who uses a black lightsaber carried off from the Jedi Temple.

They are too dangerous for others to use. First mistake, and your dead...they have a very steep learning curve and a very negative downside if you make an error. You make a mistake using a normal sword then your not going to cut yourself in two.

Pretty much, if you screw up, your dead.

Han Solo uses a ligthsaber in Empire strikes back.

Yes, but if you recall he looked very ungainly wielding it. Honestly, no sensory feedback from anything it goes through? How do you tell where the thing is in relation to yourself? One small flick of the wrist equals a 6 foot smoldering gash in whatever happens to be in the way. Just moments before Luke had slashed through ice mere inches from his toes. Would a normal human have the stones/skill to simply swing away like that?

What if you're holding it upside-down when you light it? What it you drop it and it doesn't turn off? Would you want to be the one that has to retrieve a lit saber rolling around on the floor? I wouldn't want to be within 20 feet of it. Now think of the instructor that has to deal with all these contingencies and no force powers to simply reach out and turn it off with a thought.

Sure, Luke just lights it up and starts waving it around like Nerf toy in IV. And honestly, Obi Wan probably should have force yanked it from his hands and told him it wasn't a toy. But, we'll suspend disbelief and say his lineage made it feel natural in his hands.
