Church of Night worships a deity. Sith don't worship their emperor ... they might respect him but only until they are strong enough to take his place.

 

Church of Night has no enemies per say though they are not shy about hate. They tend to avoid humans except to occasionally use them as tools. The Sith do have enemies, Jedi and the Republic, and will use non-force users as needed to help defeat those enemies.

 

Church of Night members have their powers granted to them by Satan. Sith are born with force powers and can learn to strengthen them. Having said that, it looks like being a witch on that show may grant you certain powers at birth but until you fully commit to Satan, those powers seem to be weak and muted. Sith may start off weak but they can grow and most importantly, can do this on their own

 

Church of Night members hide who they are even though they seem powerful enough to take over anytime they choose. They are afraid of being exposed. Sith hide from no one and lord over others as their whim demands. You don't expose a Sith, a Sith exposes you.

 

As for a template you could probably follow the plot line of the show. A Sith who has a republic parent and in order to advance as a Sith ... politics wise ... you have to fully commit to their teachings even though you disagree with them.

 

I liked the Sabrina series ... a lot ... but there isn't much the Church of Night has in common with the Sith other than enforced dogma and "magical powers". As for being "evil" that is purely subjective and depends on your point of view.
