I've been playing with my jedi sage friend since level 10, and at the beginning he too had Jarus as the Supreme Chancellor. During one of the class(spoiler belwo has more details) stories Jarus is removed from office one way or another. The events where you see Saresh are after that class's events. The events aren't specifically mentioned at any point because there is no canon atm as to which version of events happened. The Bounty Hunter can either kill Jarus or expose a scandal that effectivelt forces him to resign in the class finale.
