In some quests she is identified as a Jedi Knight, in others as a Consular. Given the fact she uses a double lightsaber ( as assassins and shadows do) shouldn't she be identified only as a Jedi Consular? Is she, during the entire game, using any other kind of weapon?

It's just a title. I think the JC gets referred to as a 'Jedi Knight' a few times.

A Jedi Knight referred to a member of the Jedi Order, who had completed their Jedi training as a student in the Jedi academy, in addition to one-on-one training as a Padawan and the completion of the Jedi Trials.

 

As a Knight and a full member of the Order, these individuals received assignments from the Jedi Councils and strove to find peace, and maintain order within the Galactic Republic. Making up the majority of the Order's members, the public was familiar with this title more than any other, and, thus, many addressed any Jedi as "Knight".

In the "Hope" trailer she uses a JK-like slam when we first see her, then uses her dualsabre with only one end lit. When she charges Malgus, she's clearly in Shadow mode (acrobatics with both ends of the sabre lit), except that when she hoofs that one Sith in the face, she's clearly wearing metal-clad boots, and at the end she uses long-range force balls, Sage-style, to blow out the rocks where she threw Malgus. Overall, her class is probably just "Satele Shan", in the same way that Lana Beniko's is "Lana Beniko".

Under game information it states Jedi Consular

These kind of characters don't usually fit into any one "Game Class" She is "Satele/Legend" or "Ambiguous because of portrayal/ Hype" or "She was just That Good". Its typically difficult putting these figures into any one game class.

I'm happy with the "Just that Good".

That is in the "In-game information" section, along with her level and health points, which doesn't mean a whole lot in lore discussions like this.

Well, in the trailer where she dueled Malgus she used both force in balance and telekinetic wave. But she uses a double bladed lightsaber. So she isn't purely a Jedi Shadow or Jedi Sage. Jedi Consular as it is in-game seems pretty fair.
