Would I be correct in understanding that turrets, drones, and beacons do not have shields? If that's the case, would it be fair to assume that blasters with their T5 option shifted to Hull dmg, instead of Shield dmg, would take down such targets quicker?

Turrets do not have Shields they do however have 70% damage reduction. In this case yes the Hull dmg upgrade would take down turrets faster, but more then that taking a laser with armor penetration makes much shorter work of turrets since it ignores the 70% damage reduction they have.

Drones actually do have shields on them, some drones get upgrades to increase said shields, many also have damage reduction upgrades on them.

Beacons don't have shields but can also be ugpraded to have some damage reduction.

The short answer is yes for Turrets, Drones and Beacons, Hull damage is the highest damage output on these targets.
