I dunno about the consular's robes, but Sith wearing pointy hats is a thing in canon.

I'm still trying to figure out why Jedi go about wearing robes so often.

I'm pretty sure they are quite comfortable. Like wearing pajamas & a bathrobe. If I could get away with it, I'd wear pajamas and a bathrobe all of the time too.

Because George Lucas wasn't creative enough to change what they wore from what the original Jedi Knight wore.

Despite the fact that Obi Wan was in HIDING so going around wearing a traditional Jedi outfit was just about the dumbest idea ever.

I'd expect a Jedi KNIGHT to wear something a little more martial. Like armor or something. But definitely NOT what you wear when trying not to be noticed as a Jedi knight.

The Jedi and Sith are warrior monks.

I assume that the robes real world monks wear was the inspiration.
