I think what might be making people unconvinced that their choices matter is the guy who spends five minutes screaming "CHOICE IS AN ILLUSION" at you.

What players hear....

Awesome, maybe I'll join the Zakuul Empire, kneel to the Emperor and go burn the old world down, kill off annoying companions, run off with (insert favorite companion here), start an affair with (insert a companion from another class), tell (insert random don't care about companion in story / alerts) to go **ck themselves, and basically make my own way in the galaxy.

What Bioware meant...

Sorry, but you can't join the Zakuul Empire, kneeling to the Emperor won't keep him alive nor keep you from getting frozen, you can kill the one companion we choose to allow, you won't be able to run off with anyone, you can recruit any companion as long as its one we have chosen for this chapter, you will do all the missions for all possible recruits regardless of whether you want them or not, and end up in the same place fighting the same mobs as every other player regardless of choices.

I wish to see consequences too... for now its only difference in Light/Dark Side points, nothing more...

OP, when you play a Bioware game that has a "choices matter" selling point you must know those choices matter at the very end when we all get to pick our favorite color!
