Ok this is more of a question than comment. Can a Sith character on the Empire side, turn Jedi, and work for the Republic? I hope so that is what I'm working on.

In terms of the lore? It happens, there are several NPCs that have that as their back-story or as something that you can make happen to them based on your choices (a lot come up in the Knight storyline in particular).

As a gameplay mechanic for your player characters? No. There are no faction changes/defection mechanics at all in the game. Even if you play extremely Light Side as an Empire Character or extremely Dark Side as a Republic Character, you stay affiliated with the faction you start on as far as gameplay goes.
One can only match, move by move, the machinations of fate, and thus defy the tyrannous stars. ~Kain

You CAN unlock the Sith race and make a Republic character with it.

I currently have a Sith Jedi Sage - 100% good karma but red skinned with red eyes - he looks pretty beastly.
