Having the same issue, my gpu is getting so hot it's causing my pc to switch off. Having to play it with case open just to get that extra bit of cool air in. Hope they sort this out soon.

Same problem, my system can easily handle the game, but after 30-40mins of playing, sitting at the menu, or waiting in the queue my GPU overheats and my computer shuts off.
There is no such thing as a no win scenario.

turn on vsync, otherwise the GPU will run at maximum capacity. (this only helps if your fps is much higher than 60 fps).

GPUs reaching 85 °C is normal these days (my GPU cooler doesnt even bother to go over 30% until after 85), but you need to build your PC in a way that the heat is transported out of it. If it isnt, then yes, your gpu will overheat, but thats not the game overheating your GPU, thats the game using the max capacity on your GPU and your PC case not being able to handle it.

The V sync button ingame is greyed out for me, can't use it (it was working in the last beta weekend).

I'm having the same issue here. Never happened in Beta. I have dual 260m's and the main card is reaching temps of 105 degrees. It is only happening with swtor. Don't know what to make of it. Computer is shutting off
Because I'm totally compulsive, been waiting for too long, and have no control over my money. I envy those that do.

Make sure you are in fullscreen mode, and not windowed nor fullscreen windowed.

just for more info here i have tried

no shadows
all shadows
windowed
windowed
synced v
un-synced v
all settings at lowest
mix of all settings up down what ever
and all i get is big time artifacting and over the top card use and heat till it shuts down ( and no its not dust of bad air flow!!)

in the beta i played all weekend for 8 hrs per session no real issues at all - NOW its just not working!!! since the new DL of content for the general release

by the way I play DDO mmo and Champions and City of Heroes and DC universe mmo and Lord of the rings and Gods and hero's (I that game I had only 1 card at the time and it was better than here!!) and have the settings all at full for
multi pass lighting
shadows
depth of field/draw distance high
detail all high
reflections
bloom
texture on all models are on high
UNLIKE THIS GAME they are are all LOW!!!

Same issue, I'm running an MSI 560 Ti Hawk, and while my GPU temps are decent in enclosed areas, anywhere that has open rendering (like Coruscant) pushes the GPU to max load and I'll climb from a stable 50-60C to 85C and climbing. I'm thankfully not having any problems with artifacting or shutting down... yet, but its pushing my case temps closer to the red zone.

I've pretty much tried every setting and have had no success in lowering these temps in these particular areas. They really need to address this, because a game of this fidelity shouldn't be pushing these GPUs to overheat.

Same thing here on my desktop:
Intel Core 2 Quad 2.5 ghz
8gb ram
Nvidia Geforce 8800 GTS 512.

Ive toyed around some...

Doing nothing - temps get up to 80c + with in a minute and pc locked up twice
Set the fan manually to different % - slows the heat down but still 80c +in several minutes
opened up my pc case - slowed down the heat more.w as able to play about 30 mins while the temp seemed to be stable at 80c and did not go above....but then game itself not pc froze.
