As the topic asks, what's going on outside the galaxy most typically mentioned in anything star wars?

A long, long time from now, in a galaxy far, far away...

Life will be pretty mundane and relatively low-tech, with a single planet struggling to keep its primary sentient species from killing itself off.

I think in one galaxy there was one planet making video games about what another galaxy was doing, :P
