Is it really viable to try to resettle Taris?

The entire Taris thing is beyond ridiculous.

And that is exactly why it needs to be done.

A Sith lord callously destroyed an entire planet and killed billions (or more likely thousands of trillions if it really was a city that covered the entire planet) of people.

Reclaiming and rebuilding that planet is saying very clearly and loudly: We will not be cowed by you, no matter how many atrocities you commit.

Except said Sith Lord had no connection to the Sith Empire.

Seriously. The people at large are so oblivious to the difference between the Jedi and the Sith at the time surrounding the event that they refer to it as the Jedi Civil War.

I understand that the Republic may have reasons to restore Taris. After all, a functional planet is more valuable than a ruined one. Even in the seemingly densely populated galaxy of Star Wars, planets capable of supporting life is still relatively rare.

The Empire's reaction is by far the most herpaderp.

Orbital strikes are probably not the ideal choice for the elimination of a viral infection.

and sending in troops to add to the infection count is? Even if an Orbital Strike doesn't get them all and end the infection it still thins their numbers.
