Ki-Adi-Mundi is by far one of my favorite Jedi masters from the lore and I'm a little disappointed I haven't seen any Cereans yet. Has anyone spotted one in the game?

That is way to hardcore imo. Who needs more than one character to think about? And romance!? Plenty of people in here don't have time for romance in real life much less in the game. Keep it casual k?
